Breakfast Bread
The recipe for this breakfast bread with dried fruit is the easiest and most delicious of all the bread recipes I have shared lately.
The dough for this bread is more like a bread dough rather than a cake dough and the flavour gets better as it ages.
Ingredients:
- 5 cups flour
- 1 cup brown sugar
- 1 teaspoon baking powder
- 1/2teaspoon salt
- 2 eggs, beaten
- 1 cup yoghurt
- 200 ml milk
- juice and rind of one small orange
- 125 gr (1 stick) melted butter
- 1 teaspoon vanilla
- 1 cup mixed dried fruit
- 1 cup coarsely crushed walnuts
How to:
Preheat the oven to 180°C. Butter a 9x5 inch loaf pan thoroughly.
In a large bowl, mix the flour, sugar, baking powder and salt. Make a small hole in the middle of the mixture and pour the beaten eggs, milk, yoghurt, orange juice, orange rind, butter and vanilla.
Mix all together until you get a homogenous batter. Add the dried fruits and crushed walnuts. The batter will be quite thick, difficult to pour.
Pour into the well-buttered loaf pan and bake for 60 to 75 minutes. Check with a pick to see if it's done (there should not be any batter sticking to the pick). When cooled, sprinkle powdered sugar on top.
