Courgettes With Garlic And Yogurt Sauce
Courgette also known as zucchini is a summer squash. It is usually cooked and presented as a savory dish or accompaniment. Courgettes are widely available in Turkey and they are at the front of our minds when it comes to summer vegetables.
They are used in many dishes as an appetizer or main dish from zucchini slices, pizza, soup, zucchini bread to salad and even something for the sweet tooth zucchini cakes. Great for vegeterians too, light, flavorful and cooks easily. Here is my recipe!
Ingredients:
- 3 medium courgettes/zucchini
- 1 large onion
- 2 levelled tbsp flour
- ½ cup olive oil
- 1-1½ cups thick yogurt
- 3-4 cloves garlic
- salt, blackpepper
- 1 cup walnuts
- red pepper, to garnish
- fresh dill, chopped, to garnish
How To:
Wash, chop the heads and tail and grate the courgettes with their skin on. Grate the onions. Chop the walnuts into small pea size and smaller and peel the garlic and crush.
Place the grated onions in a pan with the olive oil and stir-fry. Add the flour, mix and stir for 5 minutes. Add the courgettes, salt, black pepper and gently cook until tender. Cool.
Add crushed garlic to yogurt and mix well. Then when the courgettes are cool enough gently mix garlic infused yogurt with the courgettes. Garnish with walnuts all around and a swirl of olive oil. Sprinkle with red pepper flakes along with some finely chopped dill.
