New Years Combo Dip
Those who love artichokes and avocados will love this easy and healty recipe. Just throw everything in the food processor and pulse. The combination is just great. Your family and friends will love it. I am preparing it for my New Years party this year. The recipe is delicious and very easy, may be you can try for yourselves too.
Ingredients:
- 2 ripe Avocados
- 2 Artichoke bottoms (canned or fresh)
- 1 small onion
- 1 small tomato
- juice and rind of 1 lemon
- 2 cloves of garlic
- 1 tsp sea salt
- 4 tablespoon olive oil
- red pepper flakes (obtional)
How To:
Slice the avocados vertically all the way around. Peel the two halves apart, take the pits out. Scoop out the insides into the food processor. If using canned artichokes, drain them, if fresh boil them until soft.
Cut the onion, garlic cloves and tomato into small pieces, together with the artichokes add them to the food processor.
Add olive oil, salt and lemon juice and rind, pulse several times until smooth. Transfer into a serving bowl and garnish with red pepper flakes. Serve with crackers.
