Lemon Cake
I love baking and lemon cakes are one of my favorite to bake. This classic cake recipe is full of citrus flavour and is going to be a hit wherever you serve it.
Ingredients:
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup butter
- 5 whole eggs
- 1 tablespoon cornstarch
- 2 tablespoons farina
- 1/2 cup diluted yogurt
- 1 tablespoon lemon rind
- juice of 2 lemons
- 1 tablespoon baking powder
- a pinch of salt
- 2 cups all purpose flour
How To:
Put the softened butter and sugar in the bowl of an electric mixer and beat until really creamy. Gradually add the eggs and mix until very smooth.
Next add farina, corn flour, lemon juice, lemon rind and diluted yogurt. Beat until it looks fluffy. Do not overmix during this step. Turn off the mixer and scrape the sides of the bowl every so often.
Mix flour, baking powder and salt and add to the mixture, mix well and pour into the well buttered 10" bundt pan. Bake at 325 F /40-45 minutes. Sprinkle with powdered sugar.
