Yogurt Soup
Probably the most widespread of all the soups in Turkey is "Yogurt Soup" or "Yayla Çorbası" as we call it. Variations of it occur throughout Turkey, the most popular of which is 'wheat soup', and is also flavoured with dried mint. Yogurt soup is a smooth soup made with yogurt, a little flour and some boiled rice. The addition of mint makes it so fresh and delicious that anybody who is not feeling well will immeddiately ask for it.
Ingredients:
- 1 cup yogurt
- 2 tbsp flour
- 1 egg yolk
- salt, to taste
- 1 chicken stock cube
- 7 cups water
- 4 tablespoons rice
- 2 tablespoons dried mint
- 3 tablespoons butter
- red pepper flakes
How To:
Mix egg yolk, flour, yogurt in a bowl and whisk until smooth. Keep aside. Add water and chicken stock cube to a medium sized pan and boil.
Add the rice and cook stirring until the rice is soft. Take a ladle of the hot liquid and mix it into the yogurt mixture and stir until incorpareted. Then add this into the pan stirring constantly to avoid any lumps.
Simmer till the soup is thickened, stirring now and then. In a pan heat the butter and add dried mint. Cook on low heat, mix the butter mixture into the soup, sprinkle with red pepper flakes and serve.
