Easy Tomato Soup

This recipe as in the song is not green but red. Itis most nutritious, filling and packed with flavour; There is nothing like a homemade soup, winter or summer when you come home tired and hungry. Itis one of the easiest soups I have tried making, you can substitutue the olive oil with butter if you prefer.
Oregano and basil as well as the nutmeg is a must here. Enjoy!
Ingredients:
- 4 large ripe tomatoes
- 1 yellow onion
- 4 tablespoons olive oil
- 1 teaspoon baking soda
- 1/4 cup flour
- 750ml milk
- 1 tablespoon honey
- salt and fresh ground pepper to taste
- 1 teaspoon dried basil /oregano
- 1 teaspoon nutmeg
- 4-5 tablespoons grated mozerrella cheese
How To:
Puree the tomatoes in the food processor, add baking soda and let sit for 15 minutes. Dice onion finely and put it in a pot with the olive oil and stir until the colour changes to pink and the onions are soft.
Add the flour to the onions and continiue cooking. In a large bowl mix milk, honey and salt and add it to the onion mixture, stir and simmer until the soup is smooth and with some texture.
Stir in the tomato pure to the milk mixture and simmer. Never let it BOIL because of the baking soda. Add pepper, nutmeg, oregano/basil. Using a hand blender puree again.
Serve with grated mozzerella, garnish with fresh chopped basil and oregano.
