Chocolate Truffles
Have you ever tried making your own truffle? Well, I have! Making your own delicious truffle is really quite cool. Truffles are the simplest of candy to make. And with this very easy recipe you can vary flavorings and coatings to make several different varieties. The trick for a delicious truffle is to use high quality chocolate. If you are making truffle for the first time this is the safest one, the cake slices you use here will help you to end up with a never fail truffle.
Ingredients:
- 1 cup fine quality bitter chocolate chips
- 1 cup heavy cream
- 3-4 slices of chocolate cake
- 1 cup candied fruit
- 2 tablespoons Grand Marnier/Coconut rum/bourbon
Toppings:
- cocoa powder
- pistachio flakes
- almond flakes
- toasted coconut
How To: over
Chop the chocolate and tip into a large bowl. Pour the cream on it. Place it over a saucepan full of water and heat gently until the cream reaches simmering point. Stir the chocolate and cream together until you have a smooth mixture. Add crumbled cake slices and the candied fruit to the truffle mix at this stage. Add bourbon, Grand Marnier, coconut rum or leave plain. Cool and chill for at least 6 hrs.
To shape the truffles, dip a melon baller in hot water and scoop up balls of the mixture or roll the truffles between your palms.
Tip toppings into a bowl and gently roll the truffles until evenly coated, then chill on greaseproof paper.
Try: pistachio nuts, almond flakes, toasted desiccated coconut or cocoa powder. Store in the fridge in an airtight container for 3 days, or freeze for up to a month.
