Agean Style Hot Zucchini
This recipe comes from the Aegean region of Turkey. It is a healty dish to eat and a quick and easy dish to make. It is also great for vegeterians and people who are on diet. You would really be amazed at how delicious a zucchini dish can be!
Ingredients:
- 2 medium sized onions
- 2 large size zucchinis
- 2 tomatoes
- 1 tablespoon of hot paprika
- 1 teaspoon salt
- 1 lump of sugar
- a handful of fresh or 1 tablespoon dried mint
- 1 egg
- 4 tablespoons virgin olive oil
How To:
Wash the zucchini, dice them about 1/4 inch size, keeping the skin on. Dice the onions and place them in a pot with sugar and olive oil. Saute over medium heat about 5 minutes. Add the zucchini, paprika and salt to the onions and stir.
Peel the tomatoes and dice them, save the juice and add only the meaty part to the zucchini mixture.
Cover the pot and reduce the heat to slow. Let it cook until all the vegetables are tender, about 10-15 minutes. No water should be added to this dish.
Remove from heat when cooked. In a small bowl beat the egg well with a fork or a hand mixer. Add it to the zucchini and stir gently until the egg is mixed with the hot zucchinis. Garnish with fresh or dried mint. Cool. Serve warm or cold.
