Carrots With Garlic and Yogurt Dressing
This dish is usually served as a typical meze or salad at lunch and dinner tables before the main courses. Meze's are a feast in Turkey. The word originates from Persia meaning "enjoyable, pleasant taste." Carrots with garlic and yogurt dressing is one of them. Ideally itis made with thick strained yogurt. Turkey is very famous for its yogurt, some of the finest is made here and we have many variations of meze's made with yogurt and served as an appetizer. This is one of the tastiest.
Ingredients:
- 5-6 medium size carrots
- 1 medium white onion
- 2 tablespoons olive oil
- salt to taste
- 12 oz natural thick yogurt
- 4 garlic cloves, crushed
- 1 tablespoon virgin olive oil
- 2 tablespoon finely crushed walnuts
- paprika flakes to garnish
How To:
Peel and grate the carrots. Grate the onion and saute it in a deep frying pan with olive oil over low heat.
Add the carrots and lightly saute them together with the carrots, stirring constantly. Add salt. Cook them down half to their original volume. They should retain their crunchiness. Cool.
Whisk the yogurt and the crushed garlic until creamy in a big bowl. Add one tablespoon olive oil. Add the carrot mixture, stir until homogenized. Add walnuts. Stir again. Transfer the carrots to a serving bowl or platter and garnish with paprika and whole walnuts.
