Sour Cherry Pie
Sour cherry trees are also called pie or tart cherry trees because of the tangy fruit they produce. They are perfect choice for cooking and baking and now is the time for sour cherries in Turkey. They are available only for a short time so itis time for the delicious sour cherry pie I had in mind for ages. I believe you've never had a sour cherry pie this good with an incredible sour cherry filling, flaky crust, and vanilla ice cream to top it all off.
Ingredients:
- 2.5 cups flour
- 1 tbsp sugar
- 1 cup butter
- 1/2 tsp salt
- 1 tbsp apple vinegar
- 7 tbsp iced water
- 1 tsp lemon rind
How To:
Combine flour, salt, and sugar in a large bowl and whisk to blend. Add butter and rub in with fingertips until small pea size clumps form. Stir water, lemon rind and vinegar in a small bowl. Gradually pour the ice water and vinegar mixture into the flour and butter mixture. Mix with a fork until mixture just starts to come together. Gather the dough together. Turn dough out onto the counter, pat into round shape and divide into 2 pieces. Wrap in plastic wrap and place it in the refrigerator for half an hour. Use one piece. (Use the other half for a different pie, keep in the freezer.)
Topping:
- 1/2 cup slivered almonds
- 1/2 cup light brown sugar
- 1/3 cup rolled oats
- 1/3 cup all-purpose flour
- 3/4 teaspoon salt
- 6 tablespoons cold, unsalted butter, cut into pieces
Sour Cherry Filling:
- 2 pounds cherries, pitted
- 1/2 lemon, juiced
- 1/3 cup white sugar
- 1/4 cup cornstarch
How To:
Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil.
Roll out pie crust and lay into a 9-inch pie pan. Combine almonds, brown sugar, oats, flour, and salt in a large bowl. Work butter into the almond mixture with your fingers, breaking up any large pieces, until incorporated completely. Cover and chill for 15 minutes. Whisk cherries, lemon juice, white sugar, and cornstarch to blend. Set aside.
Transfer cherries and any accumulated juices into the prepared pie pan. Press down into the pan. Crumble oat mixture over the top. Place the pan on the prepared baking sheet. Bake in the preheated oven until cherries are bubbling and the crust and crumble topping are browned, about 1 hour 15 minutes. Let cool completely. Serve with ice-cream.
