Bulgur Wheat Patties
Bulgur is an indispensible ingredient in the cuisines all over the world and it is one of the jewels in the crown of Turkish cooking.
The usage of this valuable nutrient has spread over a wide range of geography, from Americas to Europe and from the Middle east to Asia.
It is said that during the Roman Empire, it was served as “ cerealis” to the Roman soldiers for breakfast.
Today many types of Bulgur are produced. Among them we can count the yellow and the brown type as well as bulgur with husk, bulgur for köfte, bulgur used for making pilav, the big- grained bulgur, the small- grained bulgur etc.
Truth be told, the idea of making Mücver (vegetable patty)with bulgur which is recommended for healthy eating and ideal for dieting, had not crossed my mind before. As I was leafing through a recipe book “ Tarihinden Tarifine Bulgur” ( Bulgur from its Origins to Recipes) by Seçil Kenar, I came across a recipe which gave me the idea. I gave it a try by modifying it slightly. It turned out to be a delicious dish with a spoonful of yogurt on the side. Come on now, it’s your turn!
Ingredients:
- 2 carrots, grated
- 7-8 leaves of collard greens or chard
- 5-6 spring onions
- 1 red pepper
- ½ bunch fresh dill
- a handful of fresh mint leaves
- 1/3 bunch parsley
- 2 cloves garlic
- 1 cup or 125 gr bulgur for köfte
- 1 1/2 glass warm water
- 3 eggs
- 2 table spoons oil
- 4 table spoons flour
- salt, pepper, paprika to taste
- oil for frying
How To:
Soak bulgur in warm water, wait until it absorbs the water thoroughly. Grate the carrots. Discard the stems of chard or collard leaves and chop them into fine pieces. Follow this by finely chopping spring onions, parsley, dill and mint leaves. Cut the red pepper into small cubes .
Place all the ingredients into a deep bowl, add eggs, oil, salt, pepper, paprika, cummin and flour. Knead all until the flavours mix and the mixture forms a uniform body.
Heat the oil in the pan, when ready, pour spoonfuls of the mixture one at a time and fry until both sides are golden brown. Place the fried pieces on kitchen towel before serving.
