Courgettes Bodrum Style

With its sugar-cube houses, draped in bougainvillea, and the palm-lined streets Bodrum is our die hard. Bodrum known in the ancient times as Halicarnassus which was the capital of Caria, was the birthplace of Herodotus and the site of King Mausolous' Tomb (4th century B.C.), one of the Seven Wonders of the Ancient World. With its turquise sea and and serene atmosphere, the bays of Bodrum peninsula offers a variety of entertaintment.

The agean cuisine and seafood is an important part of its night life. In other words 'Rakı, Balık, Meze' as itis called in Turkish.(Ouzo,fish and tapas) Almost all aegean dishes are very tempting and varied in taste and appearance.
Here is a simple and  delicious one from Bodrum in Oya's Cuisine.

Ingredients:

  • 5 medium sized courgettes
  • 1/3 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil

How To:

Wash and drain the courgettes. Slice them lengthwise about 3/4 inch thick. Sprinkle with salt and leave aside for 15 minutes. The juices ooze out. Pat them dry with paper towel.

Add black pepper to flour and mix. Toss the courgettes in the flour mixture. Place them on oiled baking sheet, bake at 350 0 F until  cooked. Drizzle some more oil during baking. Place them in a serving dish and cool.

Pour the magic sauce on courgettes and serve.

Magic Sauce:

  • 4 cloves crushed garlic
  • 2  lemons (juiced)
  • 1/3 cup  extra virgin olive oil
  • a pinch of salt
  • a few fresh mint leaves minced or 1 teaspoon dried mint
  • paprika

Pour the lemon juice in a deep bowl, add crushed garlic, a pinch of salt and start beating with a fork or a beater. Add the olive oil drop by drop  continiue beating. It will emulsify. Then season with minced fresh or dried mint and paprika.(optional)
